It was about time I baked some fresh bread. Recipe here.
This weekend was exactly how I wish summer would be: family dinners, fun dates (we saw Martin Short at the Paramount on Friday!), baking, swimming, drinking Corona Lights in the sun, barbequing, ... I have to keep reminding myself that the weather this summer won't be like this. Or do you not remind yourself and then just get angry when it's 110F every day of the summer?

chewy cookies and cream cookies
These cookies taste just like eating a bowl of cookies and cream ice cream. The recipe makes two dozen cookies; I just had to bag up cookies to give away because I've already had too many.

Ingredients:
2 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 tsp vanilla extract
about 14 oreo cookies
Preheat oven to 350F. Line baking sheets with parchment paper. In a small bowl, stir together flour, baking soda, and baking powder.
In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the dry ingredients. Add oreos directly into batter and beat on medium high speed until oreos are crushed and blended into dough (I crushed mine some before and then did this.) Roll dough into balls about 1 inch to 1 1/2 inch in diameter and place onto ungreased cookie sheets lined with parchment paper about 2 inches apart.
Bake about 11-12 minutes in the preheated oven, or until golden around the edges. Cookies will be initially puffy when taken out from oven and will flatten after they cool.

Happy Friday
Happy Friday! Okay, I cheated a little, this is an old Happy Friday picture I made...I didn't have time to make a new one this morning. It seems appropriate though because of the amount of cookies I baked last night.

spring break
Ahhh...Spring Break. I love you.
Saturday was really rainy, so I stayed home most of the day and then went shopping with Meg. I also started prepping some food for Sunday's brunch. I made double chocolate biscotti, chocolate covered strawberries, and an asparagus and prosciutto strata. Everything is gone now and I didn't snap any photos. We juiced grapefruit and oranges for mimosas. Big hit.
Later we went down to Lucy's Retired Surfer Bar to watch a student from my school perform. He's from Lesotho and his set was adorable. Then we stopped by the W Bar (!!) and I had a cucumber jalapeno cocktail. SPICY.
The day ended with family dinner (delicious steaks!).
Today I did four loads of laundry, cleaned up, and graded tests. The sun finally came out and Eric and I ventured down to the Green Belt.

heart eggs
Did you ever see the heart shaped eggs pop up on Pinterest? I forgot that I made some a while back. My hearts turned out a little lopsided, but still cute.
I found the instructions here. Basically you boil an egg and while it's still warm you make a set-up with a chopstick to make the indentation.
This week is so busy! I put in my midterm grades on Friday, and then it's Spring Breaaaaaaaaak!

Happy Friday!
This weekend is a busy one. I just checked the calendar on my phone this morning and realized tomorrow is a five-hour photography class that I bought a groupon for. I can't believe I almost missed that. And a good friend's girlfriend is in town from Florida and the annual Zilker Park Kite Festival is also happening close to my house on Sunday.
Last night was girls' craft night..I was thinking I might be working on something to show on the blog. Nope, we ate and talked for three hours, ha :). I'm promising myself in a week that I'll be able to make some stuff (because it will be SPRING BREAK!!).
