vegetables.
Last weekend I was in Austin and this weekend I was in Charleston. I've eaten a lot of heavy foods (french fries, burgers, cupcakes, etc) these past couple weekends. Tonight I was craving (non-fried) vegetables.
I made a curried kale + lentil soup to use up my kale. I just cooked an onion and some garlic in olive oil, then added the kale, then the (already cooked) lentils, and then added chicken broth and water (and salt, pepper, and a dash of curry powder). I pureed it before eating. It tastes good and healthy. I made some cornbread muffins to go along with the soup.
Yesterday I went with some of my good friends to Sermet's Corner, a small cute restaurant I use to frequent while I was living in Charleston. We had a leisurely lunch (two hours) and I had a couple glasses of some sparkling wine. I finally had a moment that I use to crave weekly when I was living there. My Saturdays and Sundays were always spent studying at the library, grading or doing homework. Every single weekend. I would bike past all the cute cafes on the weekends on my way to and from the library and be so envious of the people hanging outside drinking beer. I wanted so badly to finally be at a time when I actually had free time and didn't have that constant feeling of being behind or not doing enough. Grad school really takes a toll on you.
Anyways, I was happy to be downtown right in the area where I used to bike past and actually be one of those people relaxing with friends!

friday.
busy, busy, busy, busy. This week I've had so much to do. This weekend is the same. I'll be happy when things slow down soon.

BBQ Baked Potatoes and Biscotti.
I love bbq potatoes! I haven't found a bottled bbq sauce that I like. I've had many sweet kinds I like in restaurants, but nothing in stores has struck my fancy (yet).
I really like the bbq sauce that you make in my favorite recipe for bbq pizza.
It's:
1 cup ketchup
¼ cup dark brown sugar
2 tsp apple cider vinegar
¼ cup dark brown sugar
2 tsp apple cider vinegar
1 heaping Tbsp brown spicy mustard
3 Tbsp soy sauce
7-8 shakes of Tabasco sauce
3 Tbsp soy sauce
7-8 shakes of Tabasco sauce
The flavors are very separate until the pizza is baked, but I'm sure they would marry in your fridge after a few days if you mixed some and never heated it. I needed the bbq immediately for my potato, so I cooked it some on the stove top. I threw some of the sauce in a food processor with some rotisserie chicken and had it on a potato. yum.
After dinner I decided I wasn't ready to start grading exams yet and I needed to get to work on using the oranges I have left (about a dozen). So I made orange almond biscotti!
yum! Recipe. I dipped mine in chocolate. They are delicious dunked in coffee or milk.

runny nose pasta.
My boyfriend has had really bad sinus problems lately, and I've just been thinking (1) poor thing (2) thank god that doesn't happen to me (well, I mean, of course there's a (1.5) I wish I could do something to help).
Yeah well this weekend my sinuses decided to freak out. My nose has been running like crazy and I was sneezing repeatedly throughout the weekend. I'm talking huge, wet sneezes.
I've done various things this weekend to try and help: Putting my tea kettle sit on the burner letting steam out for hours to add moisture to the air, Using Vicks, Running a small humidifier in my room, Performing a "nasal rinse" (similar to using a neti pot), .... Okay, anyways, I've been doing everything.
Today I decided tonight's dinner should be SPICY. It looks innocent in the picture, but I put in a decent amount of ground red chili pepper hoping to loosen up my sinuses. Success.
I also had half of a glass of red wine from a bottle that's been open for almost two weeks.*
And, after dinner, I had a chocolate truffle.
These are so good! I picked them up on a whim at Target because they were on sale.
* = I recently purchased a wine pump from Ross for $8. A very well spent $8, especially if you live alone and like to drink wine!
