Ingredients --------------------- 1/4 cup freshly squeezed orange juice 1 tbsp light miso 1 tbsp canola oil 1 red bell pepper, seeded and chopped 1 green bell pepper, seeded and chopped 1 yellow bell pepper, seeded and chopped 2 cups frzn edamame 5 scallions, thinly sliced salt & freshly ground pepper to taste 1 14-ounce package light firm tofu 2 tbsp chopped fresh cilantro
1. Preheat broiler to high. Whisk together orange juice and miso in a small bowl and set aside.
2. Heat oil in a large skillet over med-high heat. Mix in peppers and cook for about 5 min. or until tender. Add edamame and cook for 2 minutes more, then stir in scallions adn 1 and 1/2 tbsp miso mix. Toss well and cook for 1 minute more or until scallions are tender. Season with salt and pepper, set aside.
3. Place tofu on a baking sheet coated with cooking spray. Brush tops with miso mix. Place in broiler 12 to 14 inches from heat and cook for 1 to 2 minutes or until lightly browned. Flip tofu, brush with remaining miso mix, and broil for 1 to 2 minutes more. Spoon edamame and pepper mix on top, sprinkle with cilatro, and serve.
